Saving Money on Food: 3 Meals from One ChickenAlmost every supermarket and convenience shop in Australia seems to sell cooked chickens. Buying a cooked chicken is often cheaper than buying the equivalent quantity of raw chicken (although for some meals raw chicken is essential). If you go at the right times, you'll often pick them up at marked down prices and save more. This is how the busiest cooks can use a cooked chook to save time, money and energy. You don't have to use it on 3 consecutive days if you put the chicken in the freezer after the first meal. You can even separate it into packages for Meal 2 and Meal 3 to defrost separately. If you like stuffing, use it on the first meal - I discard the stuffing altogether because none of us like it. Day 1 / Meal 1.Enjoy the chicken hot or cold with salad or vegetables. Day 2 / Meal 2.Use the remaining meat off the chicken for sandwich filling, or toasted chicken, avocado and breads, or as the meat in a stir-fry. Day 3 / Meal 3.Soup! You don't have to boil stockpots for days on end. Just put the rest of the chicken in a saucepan of water and boil gently/simmer for about 20-30 minutes. Remove the chicken and place on a plate to cool. Add bits on hand and boil long enough for vegetables to cook through. By this time, your chicken will have cooled enough for you to take off any remaining meat and add it to your soup. Bits to add can include: Chopped carrot, potato, pasta pieces, spring onion, green vegetables (fresh or frozen), etc. You will only need a small amount of each. Thyme is my favourite herb for chicken soup. Enjoy with fresh bread. Add some grated or thin slices of cheese if you wish. If your bread isn't that fresh, toast and cut into squares for croutons.
